Mmm Salsa

No post for a long time. A lot has happened since then, including a brief hospital stay on my wedding anniversary, a beach vacation, a summer filled with picture taking at various local places, becoming a member of a reunion planning committee for alumni of my HS band, almost the entire OSU football season, a doggie dew claw snag (including a trip to the vet for antibiotics and pain meds), and the planned start-up of the 2009 Copper Christmas at work.

The latest news is that we visited our old college roomie, Emily, over the weekend in Cinci. Being the awesome person that she is, she took us to Jungle Jim's grocery store where we found a molcajete for $15!!!! There are like $50 from William-Sonoma, so we were really excited to find one much cheaper. And we bought 2, one for a gift. So, the plan is to make some salsa later this evening. I'm so excited.

Its been a while since I've posted a menu, or made one for that matter. So, I need to do that for this week. As soon as I decide what to have, I will post it.

Menu week of 6-8-09

This week I'm going to try making my own hummus. We'll see how it turns out. I am going to try to eat a little more healthy from now on. We are thinking about going to the beach in August and I am definitely not in swimsuit shape. So, the plan is to eat better food, frequent the gym more (since I am paying for my membership), and have healthy snacks between meals to keep my metabolism going, oh and just eat less in general. I always over eat. I eat until I am stuffed and thats not really good if you would like to lose a little weight. So, hopefully here is to a healthier summer.

Monday: Chicken basil feta pizza

Tuesday: Hummus and pita chips

Wednesday: lemon pepper chicken salad

Thursday: Baked chicken and veggies

Friday, Saturday, Sunday: I'll be in Put-In-Bay all weekend for a girls weekend. My friend Emily invited me to come along, and no boys aloud; sorry Jared ;)

It looks like a very chickeny week, but I plan to buy the 5 pack of individually wrapped chicken breasts, so rather than freeze the ones I wouldn't normally use and find them in the freezer a year later, I decided I would use them all this week.

World's biggest slacker here. I'd like to say that I've been busy and haven't had time to update menus, but its just not true. Anyway, we are back on track and here is the menu for this week:

Thursday: grilled lemon pepper chicken salad
Friday: Hummus with cucumber and pita chips
Saturday: Frozen pizza

Menu week of 3-29-09

Wow! it has been 3 weeks since my last post. I am falling behind, but I'll use the excuse that I've been busy, which is sort of true. Anyway my sister and her boyfriend came to visit Wednesday through yesterday. We visited the botanical gardens and the cleveland zoo. It was fun. I had a butterfly that was really photogenic at the botanical gardens. He kept posing for me, but refused to pose for my sister ;)

I helped out with the Kenston Science Olympiad Invitational last weekend. It was a lot of fun. I'll definitely be helping with that again next year. The weekend before, we went to the ACHA hockey tournament and watched Penn State cheat OU out of the semi finals, but its ok because they just got beat in the semis anyway.

Its feels like spring cleaning in the kitchen this week. I'm using up stuff that I've had for a bit just to get it out of my cupboards. Well, here is this week's menu:

Monday: Chicken soup; I have some frozen chicken, broth, and rice I need to use up
Tuesday: Kung Pao chicken; My mom gave me a box meal a month ago to try and I just never made it
Wednesday: leftover chicken soup
Thursday:Hamburger and Pasta salad; had a box of pasta salad ;)
Friday: Spaghetti; bought spaghetti at Sam's Club, need I say more? also bought a few sauces when they were on sale

So, I know I went a week without posting a menu. I was really sick and really busy last week and didn't have the time or energy to plan any of the meals last week. Now that I'm feeling much better and am 1 year older (as of yesterday), I can get back to the regular routine. Ok, here is this week's menu:

Menu week of 2-22-09

Last week didn't go completely as planned. As a result we had cheesy chicken and rice casserole tonight and a meal is carried over to this week. We'll be out of town this coming weekend because we'll be celebrating Jared's dad's birthday with his family. So here is this week's menu:

Monday: Roast beef Crockpot meal

Tuesday: Homemade deli sandwiches with all the fixens

Wednesday: Homemade lasagna

Thursday: Chili

Friday: Leftovers (travel day)

Saturday & Sunday: Out of town

I'm also making sugar cookies for Jared's dad and a friend, whose birthday is also this coming weekend (well, her 1/4 birthday since she is a leap year baby). I'm also making a gluten-free birthday cake for my dad since his birthday was Valentine's day.

Menu week of 2-16-09

Finally, a week of nothing to do! We finally finished our living room remodel, now all we need to do is buy furniture for it. I decided the next big project I want to take on is creating a workout room in the basement. I am left to do all the planning and research myself, because J wants nothing to do with it at the moment. He's not really ready to take on another big project so quickly. Anyway here is the menu for this week.

Menu week of 2-8-09

As I just got back in town this afternoon, there was no Sunday menu post. This weekend I visited the family and ate some tasty local cuisine. I met an old friend at Dakota's roadhouse for dinner on Saturday evening. We haven't talked in 7 years (which means since we were in high school) so we were able to catch up and share our gossip about our old classmates. It was a good time. I had a bacon angus cheeseburger, fries, and a sweet tea, which the waiter was kind enough to ask if I wanted vodka in. Sadly, I had to refuse because Jared wasn't there to drive me home. Sunday, we had t-bones, baked potatoes, corn, and grilled pineapple. Grilled pineapple is quite possibly the most delicious thing on the planet. This afternoon, I met my mom at Cardo's Pizza in Jackson (which is my favorite pizza ever) and she gave me a cute little Valentine's card. I brought a pepperoni pizza back up here for Jared and I for dinner. So without further delay, here is the rest of the week's menu.

Tuesday: Kielbasa and caesar pasta salad
Wednesday: Brenner; probably scrambled eggs and bacon and sausage or waffles
Thursday: Cheeseburgers and oven potatoes
Friday: Italian chicken, baked potatoes, and green beans
Saturday: per V-day tradition, we will be having chinese takeout. We started doing this about 5 years ago when we were in college.
Sunday: TBD, just not coming up with anything good right now

Cute story: the year we started the chinese food thing for Valentine's day dinner, I sent Jared an invitation to the dinner I had planned. We lived in dorms right next to each other, but I opted to mail the invite rather than just hand it to him or just slip it under his door. We had these study rooms in the hallway of my dorm, so I reserved on for 6:00 that day. The invite I sent him had a picture of the study room drawn with a clock that read 6:00. He got it in the mail and then came over at 6 and we had chinese food for dinner. It has been our thing ever since.

Week of 2-1-09 menu

Yesterday for lunch, we had Little Kahuna corned beef sandwiches from Mike Kahuna's Deli in Streetsboro. The corned beef is served on rye and has spicy mustard and swiss cheese. Mmm it is so good. They have so many tasty things that I need to try. That being said,
Monday's special is beef stroganoff.

I'll be out of town from Friday evening to Monday morning. My sister is hosting a purse party on Sunday afternoon, so I'll be driving home Monday morning. Good thing there will be lots of leftovers for Jared to eat over the weekend, though I have a feeling there may be some TacoBell wrappers here when I get back.
My dad has celiac disease, so I anticipate some yummy gluten-free dishes this coming weekend. Which reminds me, I need to go to Mustard Seed Market and buy some gluten-free noodles to take to him. Maybe some gluten-free beer too ;) Superbowl tonight: pizza, chips and salsa, and cream cheese/ refried beans dip.

Friday: Cheeseburgers and oven fries
Saturday: Baked Pork Chops with steamfresh potatoes and veggies
Sunday: Pizza, chips and cream cheese/ bean dip; unless we go somewhere to watch the game.
