Weekly Menu 1/15/24

 It's been almost a month since my last menu post. We had a great Christmas and New Year filled with family and friends and lots of food. We had our traditional Christmas eve "Cheese and Crackers" dinner:


The day after Christmas, we traveled to see family and had a themed potluck. This year it was "Merry Grinchmas" and we all brought green food to share:


Here is a collection of foods I have made in the weeks between Christmas and now:

Japanese Curry (with chicken, potatoes, and carrots) over basmati rice and a side of kimchi


Korean Beef Bowls: basmati rice, kimchi, sliced carrots and cucumbers, korean seasoned ground beef, and a sriracha mayo sauce


Homemade granola with chopped almonds

This past weekend, I went to PA with my little sister and some of our friends for a girls' weekend trip. We had a lot of fun hanging out in our cabin (with Trevor the flying squirrel who made his appearance Friday night after we started a fire and warmed up his chimney home...). We visited a winery Saturday and spent a lot of time around the table working on a giant puzzle and drawing in the Reverse Coloring Book. (highly recommend! It is so much fun) We also celebrate my sister's birthday on Sunday. I didn't take a ton of pictures this weekend, but here are my reverse coloring pages:

And that is what I've been up to for the past few weeks. Here's the menu for the week, even though its already Tuesday:

Monday: Chicken Tortilla soup

Tuesday: Honey Mustard Pretzel Crusted Chicken, potatoes, and green beans

Wednesday: Cashew Chicken, broccoli, and rice

Thursday: Cavatelli Pasta and San Marzano Tomato Sauce (Thanks for the inspo and recipe Ginny!)

Friday: Pizza Delivery

Saturday: Korean Corndogs

Sunday: TBD
